Step 1
Mix basen, kesar & water to the consistency of dosa batter as shown in photo attached. Keep it aside.
Step 2
Next, place a deep & big kadai on gas & put oil in it. After the oil is hot, take spatula or vessel with multiple holes in it & pour the basen watery mixture through the spatula. The mixture will fall in small balls into the oil & then deep fry the balls. The balls should not be too soft or over fried. The fried bhoondis will be around 5 cups.
Step 3
Note that you have to wash the spatula after each time you use it so that the balls fall freely & with good shape each time u pass the basen mixture through the spatula.
Step 4
Next, keep a large vessel on gas with sugar & water in it. Note that water should be above sugar & make pak. Pak when ready should be one thin thread when taken between 2 fingers.
Step 5
Finally, put the bhoondis into the sugar solution, mix altogether & make laddoos of it when it is not too hot. You can also fry raisins & cashews in ghee & put it into the sugar solution before rolling it into laddoos.
Step 6
Bhoondi laddoo is ready to be served.
