Step 1
Boil potatoes in cooker giving required numer of whistles. Then after the cooker cools down, open the cooker peel the potatoes & smash them well.
Step 2
Take a kadai put oil in it & spurt mustard seeds & jeera then add onions sliced thin & longish & saute till onion is translucent, then put ginger-garlic paste, saute for a minute, put green chillies, turmeric, salt & curry leaves & saute again .
Step 3
Then add water & cook with closed lid for 5 to 10 minutes. Potato sabji is ready. Note that potato sabji should be moist & little watery. Do not make it dry.
Step 4
Serve it hot with puris. Puri recipe I have already shared it earlier. Potato sabji also goes well with rotis & dosas.
