salted mango paraku
Paraku is a side dish prepared in Malabar part of Kerala by using coconut n curds.

Step 1
Smash a little salted mangoes n add to it chopped green chillies. Keep aside. Take a mixie jar n grind coconut, dry red chillies Before grinding just saute in oil dry chillies for a second. Grind to a fine paste n finally grind 2 tbsp mustard seeds for few secs.
Step 2
Add the ground paste to the salted mangoes n mix well. Add a sprig of curry leaves. If the gravy is too thick add little water. I had avoided curds since salted mango is already sour.
Step 3
Season in oil mustard, dry red chillies n curry leaves.
