Step 1
Boil 3 eggs,cut it into 4 equal parts.keep it aside.
Step 2
On a pan on medium flame,add crushed onion,ginger,green chillies.saute well.add salt,turmeric powder,pepper powder and mix very well.saute it till the onions are soft.
Step 3
now boil the potatoes and mash it well when it is cooked enough.add this to the pan and mix with the onion masala.cook for 1-2 minutes.(potatoes should not be over cooked)
Step 4
Add Corrionder leaves into and mix well.then turn off the flame.now our mixture for bird’s nest is ready.let it cool.

next is the filling process.for that,make medium sized balls of the potato masala. press it little and place one piece egg in its center and roll well.like this make others too.

next,beat one egg in a bowl.take the vermicelli and spread on a plate.take one egg stuffed potato roll,dip it in egg and cover with vermicelli.like this make others too.
Step 7
now the bird’s nest is ready to fry.for that,heat oil in a pan and transfer vermicelli coated cutlet into it.fry in medium flame till they are golden in colour.
