cut them into thumb size pieces

slit each inch piece into 4 sections.
Step 1
Set the instant pot to saute mode. When hot, add the ghee. After the ghee is hot add mustard seeds. When it splutters add the curry leaves, hing and green chillies. Saute for a short bit.
Step 2
Add finely chopped onions and a pinch of salt to it and saute it for a couple of minutes. Then add tomatoes and sambar powder to it. Saute all of it for around 4 minutes till all of it blends in well. Stir continuously.
Step 3
Add all vegetables in the vegetables section to this and saute for a few minutes.
Step 4
Add washed toor dal to this. Change the instant pot setting to manual and set it for 8 minutes at high pressure.
Step 5
Let the instant pot to release pressure naturally. Set it in manual mode and add tamarind paste to it. Let it boil.
Step 6
once its boiled for a few minutes, add finely chopped cilantro to it and serve it hot with rice or chapati.
