Step 1
Firstly, in a heavy pan heat 1 cup ghee and add 2 cup gram flour ...mix it well and start to roast it on low flame.....after five minutes add semolina and continue to roast it for 20 minutes on low flame...
Step 2
Roast untill the gram flour turns golden brown and it start releasing ghee....
Step 3
Transfer in another plate and keep it aside....let's make sugar syrup...
Step 4
Take 1 1/2 cup of sugar and half cup of water in a pan and boil it and stir it continuously till it turns to 1 string consistency ... now turn off the flame....add saffron strands to rose water and rub it with finger...it will release its color in rose water ...
Step 5
Now put that rose water and cardamom powder in the sugar syrup..
Step 6
Mix the roasted gram flour in the sugar syrup.....remember sugar syrup should be warm when we mix gram flour..
Step 7
Mux everything well..we will see that gram flour and sugar syrup start to turn thick...
Step 8
Now transfer to the tray lined with baking paper.......press and level up making sure it is set uniformly.
Step 9
Leave it for 20 minutes to set now cut it in your desired shape....our besan barfi is ready...... garnish it with sliced almonds
